Perhaps it was obvious to everyone else, but I only recently realized that the Foreman grill makes an excellent stand-in for a panini press. Yesterday's lunch was about polishing off the tiny amounts of things left in the fridge: half a red pepper, a few withering stalks of green onion, a smidge of mozzarella.
Roast the green onion & red pepper together with half an onion in butter, put it on focaccia* with mozzarella, salt & pepper, and grill. The ends of the lettuce on the side with Newman's Own balsamic vinaigrette, and voila, lunch.
*Everything is better on focaccia.
